From the MyBacon people

Grown in Pennsylvania.

Your mycelium was grown on a third-generation Pennsylvania mushroom farm that has been cultivating mushrooms since the early 1900s. We grow organic oyster mushroom mycelium there, then harvest the fibrous sheets whole.

MyMycelium runs on the MyBacon supply chain: the same whole sheets, from the same farm, ground instead of brined or fried.

This farm is growing the first new mushroom crop in more than 400 years: whole slabs of Pleurotus ostreatus. It is the same gourmet oyster species sold at farmers markets, grown with Pennsylvania’s commercial mushroom-farm infrastructure.

Mycelium, explained

The sheet is the ingredient.

Oyster mushroom mycelium grows into a dense, fibrous sheet on wood chips and other crop byproducts. The fibers carry the protein and the fiber. We harvest the sheet whole, then dry, toast and mill it. That’s it.

Questions you might have

Short answers.

Wait, this is a mushroom?

It is organic oyster mushroom mycelium: the dense, fibrous network an oyster mushroom grows before it fruits. We grow and harvest it as whole sheets, then dry, toast and mill them.

Is this a supplement?

No. It is a food, the same mycelium we sell as MyBacon. Cook with it.

Is it cooked?

Yes. The sheets are dried and toasted before they are milled.

What does it taste like?

Mild and toasty. It picks up whatever you cook it with.

How do I store it?

Sealed, cool and dry, like flour.

Where is it grown?

The organic oyster mushroom mycelium is grown in Pennsylvania. MyForest Foods is based in Green Island, New York, where orders ship from.

When does it ship?

Retail orders are coming soon. For wholesale quantities, samples and shipping timelines, use the inquiry form above.

Can I buy a pallet?

Yes. Use the Wholesale & R&D form or email Gavin with the pounds a month you need. Every case and pallet ships with its lot certificate of analysis.

What is this new technology and new crop you refer to?

Ecovative is the mycelium technology company behind AirMycelium™, with nearly 20 years of research and commercial-scale experience across food, packaging, foams, and fibers. AirMycelium grows pure, whole sheets of organic oyster mushroom mycelium and fits into existing mushroom-farm infrastructure.

Why is it called MyMycelium?

It is the ingredient behind MyBacon and MyChips from MyForest Foods. The “My-” runs in the family.
